With all the long-distance planning and organizing, I was really getting stressed and started doubting having the big day. Not in the way that I love my Mr., but just if having a ceremony/reception and attempting to gather people and adding the finishing touches was worth it. Many tears were shed and fists shaken in anger, but in the end ( and I mean the end of end, 7am the morning of the wedding!), I did all I could do, and I let myself go with the flow of the big day.<br />
First the hair was done, and bam- instant mind explosion. During our trial run, it was kinda rough, because even though I had a picture, I felt like there was some miscommunication between the both of us. But that morning she told me that it was kinda annoying her that she couldn't get it right, and so she wanted to make it perfect. Friggen A, she did! Then there was make-up. Another thing I wasn't too psyched about, because after the trial, I looked in the mirror in some natural light and felt like I looked a little cake-y. That as well as my mascara was already smudging (and this stuff was supposedly waterproof?). But again, once she was done, wowza! If you ever can get faslie eyelashes, DO IT. THEY ARE AMAZING. I usually wear glasses, but I wanted my eyes to really stand out, so I donned the dreaded contacts (usually it takes me 15-20 minutes to put them in, I'm not even exaggerating, but today it was record speed, 2 minutes, huzzah!!). Ahh and the dress... since I did my fitting before moving to HK (late march), and the dress was being kept in the states, I had no real idea if it would fit or not. At the fitting, it was a little bit snug, so I knew I needed to lose weight. So after using the estate's gym and working up to 4-5 classes of Zumba a week, all I could do was cross my fingers. The first time I got to try it on when I came back home, it was a litttttle tight. It didn't look bad at all, but I was afraid I was going to walk around like a robot all day. Then the morning of the wedding... how the hell did this go to fitting PERFECTLY?! Especially after many a bad-meals and lack of gym time??? Flippin miracle! <br />
One thing I didn't expect to go my way was the bouquet. I'm horrible with flowers, and the only type I know I really like are peonies. Unfortunately, since we were having a fall wedding, they are not in season. I had one idea set up with the florist, rather early in the planning stages, but about 1 1/2 months before the wedding day, I went back to it and started having doubts. After hours of scouring the internet, hoping for something unique, bam! Roses with White Cattleyas (with a yellow center). The florist said it could be arranged, and I waited patiently. When she brought the bouquet in, my heart just started to swell. Never had I seen a bouquet like this, so it already had the uniqueness I wanted. But simply put... it was just perfection! If it weren't for the tears in my eyes from my hair being pulled and yanked, I probably would of cried a little out of happiness.<br />
The one thing that actually didn't go our way that we thought woulda been easy-peasy was our cake. LOL oh man... the design came out soo.... badly.. I think what happened was the consultant we met with left after we did our taste testing/design meeting. We did this before we left for HK, so again, another thing done rather early. He was actually great, and felt like he understood what we needed. After we made our stationary though, we sent the cake company a copy so they would have more of a feel of our design, and learned that our contact left and moved to the east coast. I asked if they understood the concept we had for our cake, and the new person mentioned that they had all the notes. In the end... notes are not as good as a 1-on-1 chat :/ Oh well! Maybe the cake will be more photogenic than what it was in person? ^^;;;<br />
With all the ups and downs, you woulda thought I was a mad person leading up to the big day. You don't know how many times I had to tell my Mr.,"I swear... you know I'm not like this...", which looking back on that... seems really sad and pathetic.. LOL. Wedding planning definitely is not my forte though, lesson learned. But now I have soo many amazing memories from our wedding day, strengthening our love and commitment to each other. So with a clear mind and heart, I can honestly say that our wedding day was absolutely worth it! <br />

After getting engaged in Seattle, we didn't have any idea what would happen, especially moving to HK. Our anniversary fell on our Thursday date-night, and Adam surprised me by making reservations @ the restaurant, Kitchen, at the W hotel here in HK. We love the W hotels- we got engaged while staying at the one in Seattle, and our wedding will be at one of the two in Chicago, so it was nice to add to our little trend. When we got there we had enough time to sit and enjoy some cocktails at the bar.<br />

After some drinks, we moved on to their restaurant, Kitchen (lol, silly, right?). We were both surprised to see that there was a buffet, but when we took a closer look, it was a mighty fine selection! I was surprised to see cured meats, a fresh seafood selection, sushi, dim sum, HK style and American style food, cheese platters, and a ton of desserts. Was very grateful the dress wasn't too tight!<br />

It's a bigger, more bustlin' place compared to Tai Wai, but nothing compared to HK Island. But Mong Kok is closer to us, and we heard from a reliable source that we could get our geek on with anime things XP.<br />

We probably spent about 2 hours going from store to store, and found ourselves famished. Unfortunately we're both really bad at just picking a restaurant and "going with it". Maybe it's our passive natures, I don't know. We would of just been fine going to get a cup of coffee, but it's VERY UNLIKELY here in HK if you're in a busy town to actually get a seat/table in a cafe setting. We did try a Starbucks and a Pacific Coffee, but there was no place we could sit just to give our aching feet a break! We were just about to head back into the train station to go home, when we saw a sign for a cafe. We figured why not, and headed in. Little did we know... we had found paradise! A very spacious, clean, romantic Japanese style cafe, that had two floors of tables. HUZZAH! At first we thought we'd just get some coffee or tea, but it ended up turning into a full meal.<br />

After our meal, we were hesitant to leave. It was soo nice inside! We're always in crowded spaces, but for some reason, some restaurants just fee soo spacious. And for once, it wasn't annoying loud inside. Most places you just hear people yapping at the top of the lungs, and babies crying.... it really does get old. I usually don't do fruit teas, but I was interested in the apple tea they had listed. It was soo nicely presented. The teapot had enough for two cups of tea, and it came with this honey/simple syrup that was just perfect. Ahhhh, couldn't of asked for more! Oh wait, but there was more! Again, this is pretty amazing that Adam was able to pick this out so quickly! The only thing that I think could think of that could have this small of a print size is either a tiny TINY Pomeranian or maybe a *gasp* kittay?! One imprint was really deep, and the other two (top right) were really light. For an animal with such tiny prints, the space between the single and the pair print is HUGE. I love this pattern tons! Wish we could have their entire collection, its just that amazing. For now though I'm going to try and keep my eyes opened here. - people like to use hand rails as a stretching tool, like a ballerina. I've seen this from women who look like house helpers to guys in suits to guys ACTUALLY prepping for a jog. ( note to self, never hold on to hand rails again)<br />
- shops like cats. Not afraid of them running off or cooping them inside. Walked past a veggie vendor today, guy was selling his stuff with his kitty companion. I now have motive to go back there and buy something XD<br />
- kids love eating after school. I'm used to snack stuff, but I see middle and high schoolers goin for ramen and sit down meals. Om nom nom nom<br />
- soo humid, just make it stop<br />
- Octopus Card (public transportation card) = AWESOME. Randomly browsing through TripAdvisor.com, and on their "things to do in HK" list, the Octopus Card was pretty high up (who knew a card could be soo much fun? LOL)<br />
- Not many people have approached me with English first (even though I'm obviously a foreigner). I don't think anyone is too happy using English.<br />
- shops are SMALL. To be expected I guess.<br />
- lots of estates has stores connected to them (just went to one in our town that has a shopping center, McDonalds, Cafe de Coral, ect). Not ours. Too ritzy? BOO! Eventually we're supposed to get connected to the train station. YAY.<br />
- older women tend to try and dress like young teenagers. It's really blizzard. I think I saw a woman in her late 50s trying to dress Lolita, and another one going for punk/neon. <br />
- PDA to the max here with teenagers/young adults. *shudders*<br />
- for fast food, it's " stay here" or "take away"<br />
- like Japan, pay bills through convenience stores. LOVE<br />
- Rilakkuma is the bees knees here. Gave in and got an iPad case/cover with him. :3<br />

And a side story: I took a stroll around town today, little exploration. A lady stepped on the back of my sandal, pulled the thong soo hard against my foot it felt like it almost took it off. T-T Then another person slammed their hand into me as they passed by; unluckily for them, their hand slammed only onto my iPod. Sounded like it hurt. Moral of the story? It definitely was a challenge getting here. From sending half our possessions via boat, to doing EVERYTHING ourselves to bring the biddies with us, we somehow were able to do it.<br />

Our first night here was kind of depressing. We thankfully had a bed to sleep on in our new apartment, but no sheets, pillows, or blankets. So we wrapped ourselves up in extra jackets and clothes and tried to sleep. All while we had the biddies closed off in one of the guest rooms, which they were NOT happy about. Thankfully that night passed quickly.<br />

Ikea has become our savior! Decent stuff at great prices. Currently we have our bed (headboard, box spring, mattress), couch, kitchen table, kitchen chairs, computer desk, computer chairs, wardrobes, shelving, and tableware all from just that one store. We've also dabbled in department store and Muji, but Ikea just has.....everything! <br />

Good things:<br />
Trains are awesome. Taxis are hella affordable. Japanese influence everywhere. Karaoke rooms can be friggen AMAZING!<br />
Bad things:<br />
Talking/ watching tv on iPhones ON THE TRAIN, getting used to lower air quality, not having the things you're used to, and OMG do people know which side to walk on, or how to line up instead of just walking RIGHT in front of you???? D:<br />

Not too long after that, I received a couple Valentine's Day Cards in the mail, and it hit me: the red envelopes for Vday rubbed off on the card inside! Which got me thinking.... oh no...Our Save the Dates are mainly white!<br />

At first I thought I would have to include 2 photos (one for the front and one for the back) to protect the contents, but then I came across some invitation inspiration pictures and a lot of people lined the inside of their envelopes with a print. Genius! So I set off to get a few supplies to make this work:<br />

Step 1: Before any cutting/measuring/taping, address all your envelopes! Don't save any writing for last, just get it out of the way now. <br />
Step 2: Take apart 1 extra envelope to use as a stencil. ** I cut off the gum seal on the flap. <br />

Step 3: Cut paper slightly thinner than what the width of the envelope is, to make sure it will fit. It's up to you on how far you want the lining to go down. My advice is make it the height of the envelope, including the flap. <br />

Step 4: Put the paper in an envelope, and fold the flap down, with the paper. This will give you a crease, which will help as a guideline.<br />

*** NOTE***: If you are using a print, be careful that it is STRAIGHT! Even though I had the lining to fit to the very bottom of the envelope, sometimes my cutting wasn't 100% even, and it would cause an uneven crease along my print. Take a close look at this picture, you can see where I messed up a little:<br />

Step 5: Pull the lining out of the envelope, and place it against the other envelope you cut to use it's pattern. Here, on the backside of the paper, you can trace the outline of the flap. ** On my stencil envelope, I also cut out the gum seal, so that when I finish cutting the paper, it would stick seamlessly to the gum seal.<br />

Step 7: On the back side of the lining, stick double-sided tape to the edges of the flap. You won't need any for the inside of the envelope. I only needed 3 pieces.<br />

Make sure to test folding the flap over, in case there are any bumps or problems. ** I noticed that with the lining, if you have that crease line a liiiiiiitle over the crease on the original envelope, you'll have less problems.<br />

Sitting down and doing this for a large group of envelopes was a little time consuming, but I'm pretty sure I'm going to add envelope linings to a lot more letters I send to pen pals :D Also keep in mind that if you want your recepeiants to see the envelope liner, and not just use a letter opener along the top seam, you might want to seal your envelopes closed with a sticker. </tbody></table><h2 style="color: black; font-family: inherit; font-weight: normal;"><span style="font-size: small;">The next step after letting the icing set is to fill them in, AKA flooding. Take the frosting you have remaining, and put it in a bowl. One teaspoon at a time, add water until the frosting has slightly thinned (where it can run off a spoon smoothly, and be "reabsorbed" back into the frosting, about 5-10 seconds). Let this new frosting sit for about 5 minutes. When you come back, you'll see some bubbles have appeared. Gently mix the bubbles out, just grazing the top of the frosting, not heavily mixing all over again. You're now ready to fill! Take a spoonful and put it in the center of the cookie. Then with a toothpick, guide the frosting to the piped outlines. Once your done, you can immedietely add decorations that need to stick. Or if you are going to continue piping, let the flooded frosting set for a couple hours. </tbody></table> These were super easy to make! I got the idea from an online food blog, but replaced the fruit sauce they used with the Tayberry Jam Adam and I got in Seattle. That was kind of a mistake though... since it's already a jam, you can't spoon it on the top and swirl it as delicately as the original recipe. But still, they taste AMAZING!<br />

</tbody></table>Oh goodness... I had no idea making Vodka Sauce was soo easy! I've never been too crazy about pasta sauce, but Vodka Sauce is just simply amazing. I would be so fat if I had this on me at all times. Wait. Crap, that's exactly what happened! Doh! But yes, so simple. I even have it memorized!<br />
<br />
- 1/2 C butter<br />
- 1 onion, finely chopped<br />
- 1 C vodka<br />
- 2 (28 ounces) cans of crushed tomato<br />
- 1 pint heavy cream<br />
<br />
In a pot, melt butter and saute onions until they are brown and soft. Then add vodka, and cook on medium for about 10 minutes. Then add both cans of crushed tomatoes, and cook for 30 minutes, still on medium heat. Then add the heavy cream, and let cook for another 30 minutes. You can use a blender to make a smoother sauce if you prefer.<br />

I love this SOO much, but I just made the recipe again, tweaking it a little. I like tangy bite of the tomato to come out more, so I only used 1/2 c of regular milk, and 1/4 heavy cream. Both me and Adam like this version more :D Yum! I've also heard of people adding more herbs to the sauce, but I like it the way it is. The picture I took I had the sauce on top of spaghetti, with bits of mozerella in as well. A little secret of mine: Adding tobasco sauce to it! Then the dish is perfect! Just like Italian Tomato in Japan :D<br />

Gahh... but now I need to really focus on trying to stick to a rigid diet. No more fat days! But... maybe vodka sauce on some boiled down cauliflower instead of pasta wouldn't be so bad, right?
